Tuscan Tortellini Soup

Ingredients
  

  • 32 oz chicken stock or bone broth
  • 2 cups chopped kale, stems removed
  • 4 oz tomato paste
  • 2 tbsp Italian seasoning
  • 1 tbsp garlic powder
  • 1 lbs Ground Italian sausage
  • 1/2 cup heavy whipping cream
  • ½ lbs frozen tortellini, preferably cheese
  • salt and pepper to taste

Method
 

  1. In a large stockpot, brown ground Italian sausage with a tbsp of olive oil if needed.
  2. Once browned, deglaze the pan with the chicken stock and bring it to a boil
  3. Add your tortellini, kale, and spices and cook it according to the package instructions. Reduce heat after a few minutes and cover pot.
  4. Once tortellini is cooked and kale is tender, add whipping cream. You may adjust cream according to your desire for creaminess.
